Few ingredients define cooking as clearly as salt and olive oil. Before complexity, before technique—there is this.

This experience begins in the Salt Valley of Añana, a unique cultural landscape where salt has been produced continuously for millennia. Walking among terraces, springs and wooden structures reveals how necessity shaped both land and community.

From there, we move into Rioja Alavesa, where olive trees grow in quiet balance with the landscape. We visit a small olive grove and boutique mill, where native varieties—particularly Arróniz—are cultivated with care and restraint.

Olive oil here is not treated as a commodity, but as a living expression of soil, climate and timing.

Alongside contemporary production, we also encounter a more communal expression of this culture: a restored 18th-century village press, still used by local families to process their harvest collectively.

Though small in scale, it reflects a way of working rooted in cooperation, continuity and shared knowledge—an essential layer of the landscape that still remains active today.

Tasting becomes a way of understanding: bitterness, freshness and texture reveal quality, precision and origin.

The day concludes with a traditional meal, where these two elements—salt and oil—form the foundation of everything that follows.
