Few products explain civilization as clearly as salt and wine.
Our journey begins in the Salt Valley of Añana, a living cultural landscape shaped by water, stone and human ingenuity over more than 7,000 years. Here, brine rises naturally to the surface and salt is still harvested through evaporation in wooden terraces—using techniques developed long before the Roman Empire.
Almost lost during the 20th century, the valley is now being carefully restored, producing one of Europe’s most prized gourmet salts.
From this mineral landscape, we move south into Rioja Alavesa, where vineyards are cultivated with the same sense of time and restraint. We visit a small, family-run winery, where wine is not approached as a product of scale, but as an expression of place, patience and character.
Tastings here are not about labels, but about understanding.
The day unfolds at a calm, unhurried rhythm and concludes with a traditional meal—where salt, wine and land come together naturally, without interpretation.
