The Ascent to the Inn
A measured climb where effort, view and simple nourishment meet
We begin at the water’s edge, in Saint-Jean-de-Luz—once a harbor of whalers, corsairs, and long Atlantic crossings. A brief, unhurried walk through its market streets and seaside promenade sets the tone: salt, history and everyday life before leaving the coast behind.
A short drive inland brings us to the lower slopes of a local mountain, where we begin to walk. The path rises gradually, alternating gentle stretches with steeper sections, following an old hillside route shaped by use rather than design. As we gain height, the Atlantic slowly opens behind us—cliffs, headlands and villages unfolding with each pause.
This is not a walk about speed or conquest, but about rhythm. We take our time to breathe, to look back, and to let stories surface along the way.
At the top, a simple mountain inn awaits. Nothing refined, nothing staged—just honest, nourishing food served with one of the most commanding views of the Basque coast. Broth, eggs, bacon, tortillas… elemental dishes that make sense only here, after the ascent, with wind still on the skin.
After lunch, we descend the same way, carrying the landscape with us.
During the warmer months, the order of the day adapts naturally: we walk first, early and fresh, and return to Saint-Jean-de-Luz afterward to eat and wander at ease.
